How to shuck an oyster

This is a quick tutorial on how to shuck an oyster as well as what you need to know before purchasing.

How to purchase oysters:

Things to be aware of when purchasing oysters, you never want to buy oysters that are open. When the oyster is open that is a sign that the oyster has deceased. A deceased oyster can be deadly if consumed raw. When opening your oyster you want to look out for discoloration, the oyster should have a semi clear brine and should not be black or brown. You also want to be aware of how much brine is in the oyster, oysters close up and save seawater (brine) within the shell for weeks. If the oyster is dried out it is most likely dead. Live oysters can be stored in the fridge for up to two weeks, cover with a damp cloth to keep from drying out. DO NOT keep oysters submerged in fresh water, they will open their shell attempting to feed and will die.

Necessary equipment:

  • Shucking tool
  • cutting board
  • paper towels or a cloth
  • A bed of ice if not consumed right away
  • (optional) Lemon, Tabasco, Horseradish

How to Shuck an Oyster:

  • Step 1: Clean off your preparation area, get your cutting board and cloth ready
  • Step 2: lay the oyster on the cutting board cup side down with the flat side facing up
  • Step 3: grab the wide part of the oyster with the paper towel or cloth with the hinge side accessible.
  • Step 4: Wiggle your shucking tool into the hinge, once inside the hinge apply slight downward pressure to pop the hinge.
  • Step 5: Once the hinge is popped, flip your shucking tool over so the scoop is facing down, wiggle the tool into the oyster and scrape the entire top of the flat side.
  • Step 6: if successfully scraped the flat top of the shell will easily come off, discard the top of the shell
  • Step 7: You should be left with the cupped part of the oyster shell as well as the brine in the cup, scrape the bottom of the shell as well until the oyster floats freely
  • Step 8: Add whatever your preference of flavors and enjoy!
